Damaris Phillips Sesame Chicken Salad - Magnolia & Moonshine Recipe

Ingredients:

1 rotisserie chicken, shredded

2 carrots, grated

2 ribs celery, finely chopped

1 cup edamame, cooked and shelled

1/2 bunch of green onions, sliced

Tasty wheat bread slices

Bibb lettuce leaves

 

For the dressing:

2/3 cups mayonnaise

2 tablespoons sesame oil

1 tablespoon rice vinegar

2 teaspoons sesame seeds

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

 

Instructions:

In a large bowl, combine the shredded rotisserie chicken, grated carrots, chopped celery, edamame, and sliced green onions.

In a separate bowl, whisk together the mayonnaise, sesame oil, rice vinegar, red pepper flakes, sesame seeds, salt, and pepper to create the dressing.

Pour the dressing over the chicken and vegetable mixture. Toss everything together until well coated.

Toast the wheat bread slices.

Arrange Bibb lettuce leaves on each toasted bread slice.

Spoon the seasoned chicken salad onto the lettuce-covered bread slices.

Top with additional Bibb lettuce leaves and cover with another slice of toasted bread.

Serve the chicken salad sandwiches immediately and enjoy the delicious combination of flavors and textures!
